Sugar-free desserts: the slimming banana bread

Ingredients
- 3 very ripe bananas
- 1 egg
- 100g unsweetened applesauce
- 180g cornstarch
- 1 sachet of baking powder
Method
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, slice your bananas into rounds, then mash them with a fork until you get a smooth purée.
- Add the egg and the applesauce. Mix well.
- Then add the cornstarch and baking powder. Mix again.
- Pour your batter into a non-stick loaf tin and bake the banana bread for approximately 30 minutes.
- Leave to cool slightly before turning out.
Sugar-free desserts: coconut panna cotta
Ingredients
- 400ml light cream
- 1 gelatine leaf
- 100ml coconut cream
- 10g stevia
Method
- Start by soaking your gelatine leaf in cold water.
- Mix the coconut cream with the light cream, then heat gently.
- Add the drained gelatine leaf and stir.
- Add the stevia, then mix well.
- Pour the mixture into small ramekins and refrigerate for 3 hours before serving!
Sugar-free desserts: chocolate-coconut ramekins, Bounty-style

Ingredients
- 100g desiccated coconut
- 1 very ripe banana
- 100g plant-based cream
- 100g 80% dark chocolate
- 2 tbsp coconut oil
Method
- Mash the banana with a fork, then add the desiccated coconut along with 100g of your preferred plant-based cream (soy, rice, almond, coconut — whichever you like).
- Pour the batter into ramekins and bake in the oven at 180°C for 15 minutes.
- Melt your dark chocolate with the coconut oil. Pour over the ramekins and refrigerate for at least 2 hours before serving!
Sugar-free desserts: lemon cheesecake
Ingredients
For the base:
- 100g fat-free fromage blanc
- 150g flour
- 1 sachet of baking powder
- 1 tbsp lukewarm water
- 1 pinch of salt
For the filling:
- 2 eggs
- 400g fat-free fromage blanc
- 4 tbsp stevia
- the zest and juice of one lemon
Method
- For the base, simply knead all the ingredients together in a bowl until you get a smooth, non-sticky dough. Cover with cling film and refrigerate for 20 minutes.
- In a bowl, beat together the fromage blanc, eggs and stevia, then add the zest and a few drops of lemon juice.
- Preheat your oven to 210°C (410°F).
- Roll out your dough and press it into a tin, then pour the filling over the base. Bake for 25 minutes and serve well chilled!
Sugar-free desserts: the Pommande tart

Serves 4
Ingredients
- 1 puff pastry sheet
- 3 or 4 apples
- 3 tbsp whole almond butter
- 1 egg
- 1 tbsp unsweetened apple sauce
- Ground cinnamon
Method
- Preheat your oven to 200°C (390°F).
- Place your puff pastry in a tin and prick it with a fork. Pre-bake for about ten minutes.
- Meanwhile, mix the almond butter with the egg and apple sauce until you get a smooth, even mixture.
- Peel and slice your apples.
- Spread the filling over the pastry and arrange the apple slices in a rosette pattern. Bake for 25 to 30 minutes. Dust with cinnamon.
