Friday yeah! Here we are, it’s already Friday — the last day of the week before the weekend 🙂 And most importantly, the second-to-last day of the challenge!
Start the day with a warm lemon juice with a touch of honey, and for breakfast: mash a banana in a bowl with a handful of oats, almonds, pecans and 1 square of dark chocolate, pop it in the microwave for a few seconds and you’re done! Absolutely delicious!Pair it with a freshly squeezed fruit juice and a kiwi.

TODAY’S RECIPE

Since it’s Friday, we’ve got you covered for a casual dinner party with friends tonight 🙂 Great idea, right? It’s never easy to come up with healthy ideas when friends drop by, so here are a few suggestions!

1. Asparagus mousse and avocado:

Ingredients for 4 verrines

For the asparagus mousse:
10 small asparagus spears (or 4 large ones)
100g fat-free fromage blanc (one small pot)
salt, pepper
For the avocado cream:
1 ripe avocado
1 tbsp lemon juice
a pinch of salt and pepper
Method:
Step 1: Peel the asparagus and cook them in a pot of boiling water for 15 to 20 minutes depending on their size.
Drain and leave the asparagus to cool.
Step 2: Blend the asparagus with the fromage blanc.
Season the mousse with salt and pepper, then refrigerate.
Step 3: Prepare the avocado cream: blend the avocado with the lemon juice. Season with salt and pepper. You can add a teaspoon of crème fraîche for an even creamier texture.
Step 4: Spoon the avocado cream into the bottom of each verrine, then pour the mousse on top. You can garnish with a shaving of Parmesan.
Keep the verrines chilled until ready to serve.
2. Caramelised cherry tomato lollipops:
Ingredients for about 15 lollipops
15 cherry tomatoes
2 to 3 tbsp honey
2 to 3 tbsp sesame seeds (or other seeds: poppy, walnuts…)
Method: Skewer your tomatoes onto small sticks, coat half of each tomato in honey, then dip the tip into the seeds.
Arrange your lollipops on a plate or stick them into a display stand.

Today’s exercise: X-lunge

1- Stand upright, feet shoulder-width apart and parallel.
2- Bend your knees and lean your body forward, reaching your left hand down to touch your right foot.
3- From this position, push off the ground and jump into the air with legs straight. Land in a squat position, this time with your right hand reaching towards your left foot.
4- Control your landing and touch down gently to avoid injury. Repeat these cross movements several times.
Fitness challenge: complete 3 sets of 25 reps.
