Ingredients
- ½ grapefruit
- 1 avocado
- 10 prawns
- ½ bell pepper
- For the dressing: 1 pot of 0% fat fromage blanc, salt, pepper, lemon juice
Method
- Peel and cut the grapefruit and avocado into small pieces
- Slice the bell pepper into thin strips. Combine the grapefruit, avocado and bell pepper
- Peel the prawns
- In a small bowl, mix together the fromage blanc, lemon juice, salt and pepper
- Divide the grapefruit, avocado and pepper mixture between 2 plates, top with the prawns and drizzle over a little of the fromage blanc dressing
Ready to serve!
Grapefruit & cucumber rice rolls
Serves 4
Ingredients
- 2 grapefruits
- 1 cucumber
- 200g sushi rice
- 6 rice paper sheets
- A few fresh mint leaves (optional)
Method
- Cook the sushi rice according to the packet instructions, then leave to cool
- Peel the cucumber and slice it lengthways into strips about 1cm thick
- Peel and cut the grapefruit into pieces
- Wash the mint leaves
- Dip a rice paper sheet in warm water to soften it, then lay it flat on a non-stick surface
- Place a strip of rice in the centre of the sheet, leaving about 3cm free at each end
- Arrange pieces of grapefruit, cucumber strips and a few mint leaves on top of the rice
- Gently roll the rice paper sheet, folding in the ends to seal
- Cut the roll into pieces approximately 3cm high
Repeat with each rice paper sheet — your rolls are ready!
Honey-roasted grapefruit

Ingredients
- 1 grapefruit
- 1 tbsp honey
- 1 tsp cinnamon
Method
- Preheat your oven to 180°C on the grill setting
- Cut the grapefruit in half horizontally
- In a small bowl, mix together the honey and cinnamon
- Coat both grapefruit halves with the mixture and place them on the oven tray, cut side facing up
- Grill for a few minutes until the grapefruit is lightly caramelised
Remove from the oven, leave to cool for a moment, then enjoy!
Citrus & rosemary detox water

- 1 grapefruit
