3 super light desserts for a perfect Christmas!

If you want to avoid letting your cellulite take hold and settle in over the festive season, we recommend cutting out white sugar, which is unfortunately found in most traditional desserts… But don’t worry, ladies — you won’t have to go without. Today we’re sharing 3 light, healthy and anti-cellulite dessert recipes that will win everyone over, even the most devoted fans of classic cream-filled Yule log!

My light desserts: apple & chocolate fondant cake

Serves 6

Ingredients

  • 2 apples
  • 200g unsweetened apple sauce
  • 1 handful of 70% dark chocolate chips
  • 300g cornstarch
  • 1 sachet of baking powder
  • 120ml almond milk (or milk of your choice)
  • 120ml water
  • 3 eggs

Method

  1. Start by preheating your oven to 180°C.
  2. In a mixing bowl, combine the apple sauce, cornstarch and baking powder. Stir well.
  3. Add the eggs and mix again, then pour in the milk while continuing to stir.
  4. Peel and dice the apples.
  5. Add the apple pieces and chocolate chips to the batter and mix well.
  6. Pour the batter into a non-stick tin and bake for approximately 40 minutes.
  7. Allow the cake to cool slightly before turning out and serving.

My light desserts: pear & almond ramekins

Serves 4

Ingredients

  • 2 pears
  • 120ml plant-based milk of your choice
  • 100g ground almonds
  • 3 tbsp cornstarch
  • 3 tbsp agave syrup or honey
  • 1 tsp cinnamon

Method

  1. Preheat your oven to 180°C.
  2. Mix all your ingredients together except the pears, until you get a smooth, even batter.
  3. Peel and slice your pears into thin slices.
  4. Grease your ramekins with a little coconut oil and fill them with the batter.
  5. Finally, gently arrange your pear slices on top and bake for approximately 30 minutes.
  6. Serve well chilled!

My light desserts: surprise chocolate mousse

“Surprise” because it’s egg-free, sugar-free — and made with chickpea water! Yes, we know, your first reaction might be “erm, no thanks!” But give it a try and you’ll be amazed. By cutting out sugar from your recipes, you help prevent fat storage and the appearance of cellulite.

Makes 4 mousses

Ingredients

  • 100g chickpea water, drained from a tin (organic, ideally)
  • 70g dark chocolate
  • 1 pinch of fleur de sel
  • 1 tbsp agave syrup

Method

  1. At least 1 hour before making the recipe, place the chickpea water in a bowl in the fridge.
  2. Melt your chocolate in the microwave, then stir in the agave syrup, mix well, remove from the heat and leave to cool to room temperature.
  3. Whip your chickpea water into stiff peaks using an electric hand mixer with your pinch of salt. Don’t be afraid to keep going — it can take a little while, and that’s perfectly normal.
  4. Gently fold your whipped “whites” into the melted chocolate, being careful not to knock the air out as you mix!
  5. Divide between ramekins and leave your light desserts in the fridge overnight.

Then enjoy a fabulous sugar-free chocolate mousse with around 100 calories per serving — compared to over 200 for the traditional version!
