Preparation time: 5 minutes

Ingredients:

  • 4 slices of sandwich bread (wholegrain preferred)
  • 125g smoked salmon
  • 1 fig
  • 100g cooked ham
  • 1/2 lemon
  • 2 cherry tomatoes
  • Chopped fresh parsley

Method:

Toast your slices of sandwich bread.

Then, using a star-shaped cookie cutter, cut out several stars from the bread, smoked salmon, parmesan and cooked ham.

All that’s left is to assemble the toasts. Thread onto cocktail sticks a star of bread, a star of ham, a star of parmesan, a star of salmon, and finally another star of bread. To decorate your toasts, top each one with a piece of fig, lemon or cherry tomato.

Thanks to their antioxidant content and diuretic properties, red berries such as cherries and cranberries are ideal for helping to drain cellulite-affected tissue.

Preparation time: 15 minutes

Ingredients:

  • 500g frozen mixed red berries
  • 200g cinnamon biscuits
  • 140g light cream cheese
  • 60g fat-free fromage blanc
  • 4g agar-agar
  • 30g butter
  • 2 egg whites
  • 2 tsp liquid vanilla extract
  • 1 lemon

Method:

Preheat the oven to 180°C. Crush the biscuits and mix with the melted butter.

In a muffin tin, press approximately 1 tbsp of this mixture into the base of each cavity, then refrigerate.

Whisk the cream cheese with the fromage blanc, then add the lemon juice, egg whites and vanilla. Spoon 2 tbsp of this mixture over each biscuit base, then bake for 15 minutes.

Meanwhile, blend half the red berries and heat in a saucepan. Add the agar-agar, bring to the boil for 1 minute, then remove from the heat. Divide this coulis between the moulds, then refrigerate for a good hour.

Before serving, top with the remaining red berries.
