The challenge
Welcome back, everyone – happy Monday! Mondays are always a little tough… but that’s no reason to give up!
We’re already on Day 5 of the Grand Challenge 2015! You’re gradually getting back into shape!
As usual, we start the day with a large glass of water (with or without lemon) to detoxify the body, alongside a balanced breakfast.
This morning we suggest:
Green tea
Fat-free fromage blanc
A clementine
Today’s recipe: tomatoes stuffed with aubergine caviar.

Ingredients for 4 servings:
4 tomatoes
1 aubergine
1 shallot
1 garlic clove
1 tablespoon of olive oil
A few sprigs of coriander
Method:
Cut the tops off the tomatoes and set the lids aside, then hollow them out with a teaspoon, keeping the flesh. Cut the aubergines in half lengthways and score them to a depth of 1 cm. Roast in the oven at 180°C for 30 minutes.
Once cooked, scoop out the pulp. Roughly blend together the tomato flesh, shallot, garlic, coriander and aubergine pulp. Fill the tomatoes with the stuffing. Drizzle with olive oil and a splash of balsamic vinegar, then add two pinches of fleur de sel and two pinches of pepper.
Bake the stuffed tomatoes at 150°C for 20 minutes. Ready to serve!
You can pair this dish with a grilled chicken breast – low in calories and high in protein 🙂
Today’s exercise:

On all fours, arms fully extended and head aligned with your neck, extend one leg straight behind you.
Make small circles in one direction, then the other, without lowering your leg.
Do 2 sets of 15 for each leg!
NOTE: Everyone has a different fitness level… if you still have energy to spare, feel free to revisit the exercises from previous days – it can only do you good.
