Almond & chocolate cheesecake
Ingredients:
- 50 g flour
- 30 g powdered sweetener
- 1 sachet vanilla sugar
- 500 g fat-free fromage blanc
- 3 eggs
- zest of one whole lemon
- 1 teaspoon baking powder
- 1 pinch of salt
- flaked almonds
- dark chocolate melted in a bain-marie
Method:
- Start by preheating the oven to 180°C. In a bowl, mix together the flour and baking powder. Then separate the egg whites from the yolks.
- In a large separate mixing bowl, beat the egg yolks with the sweetener until the mixture turns pale. Add the lemon zest, then the vanilla sugar. Fold in the fromage blanc, followed by the flour and baking powder mixture, stirring well to combine.
- Whisk the egg whites to stiff peaks with a pinch of salt, then gently fold them into the batter, being careful not to deflate them. Pour the batter into a cake tin and bake for 20 minutes. The top of your cheesecake should be nicely golden!
- All that’s left is to let your dessert cool to room temperature, then refrigerate the cheesecake until ready to serve. Don’t forget to decorate it with flaked almonds and melted dark chocolate!
Marbled yogurt cake — a must-have among wholesome and indulgent chocolate desserts!
Ingredients:
- 1 x 125 g plain 0% fat yogurt
- 3 pots of flour
- 2 pots of powdered sweetener
- 1 pot of unsweetened bitter cocoa powder
- 1 sachet vanilla sugar
- 1/2 sachet baking powder
- 3 eggs
- 60 g unsweetened apple sauce
- 1 pinch of fine salt
Method:
- In a mixing bowl, combine the yogurt, sweetener, vanilla sugar, salt, eggs and apple sauce, then add the flour and baking powder. Mix well until you have a smooth, even batter.
- Pour 1/3 of the batter into a separate bowl and stir in the cocoa powder. Mix well, then preheat the oven to 180°C!
- Pour the chocolate batter into the bottom of a cake tin, then cover with the plain batter. Simple as that! Using a knife, swirl through the mixture to create beautiful marble patterns. Finally, bake for 35 minutes!
Coconut, banana & chocolate cookies
Makes 10 cookies
Ingredients:
- 2 very ripe bananas
- 30 g of coconut (desiccated)
- 20 g rolled oats
- 30 g dark chocolate, roughly chopped
- A splash of plant-based milk (optional)
Method:
- Preheat the oven to 180°C.
- Peel the bananas and roughly chop them. Blend with the desiccated coconut and rolled oats.
- The dough should be smooth and firm enough to shape into balls. If not, add a little more desiccated coconut.
- On a baking tray lined with parchment paper, shape your 10 cookies. Press a few pieces of dark chocolate into each one.
- For a lovely golden colour, brush the cookies with your choice of plant-based milk before baking.
- Bake for 10 minutes for soft cookies, or 15 minutes for a crunchier result.
Each cookie contains fewer than 60 calories — a great way to enjoy an Easter treat without any guilt!
Chocolate & sweet potato cake
Ingredients:
- 100 g silken tofu
- 100 g sweet potato
- 70 g dark chocolate
- 1 to 2 tbsp agave syrup
- Approx. 50 g walnut halves
Method:
- Preheat the oven to 180°C.
- Peel and cut the sweet potato into large chunks, then boil until a knife slides in easily. Meanwhile, lightly toast the walnut halves in a dry frying pan. Once golden, remove from the heat and coat with the agave syrup, stirring to combine.
- Melt the chocolate in a bain-marie, then stir in the walnuts so the chocolate takes on their flavour.
- Blend the sweet potato and silken tofu together until smooth. Stir this mixture into the chocolate and walnuts.
- Pour everything into a tin lined with parchment paper.
- Pop it in the oven for 10 minutes, then leave the cake in the switched-off but still warm oven for a further 15 minutes.
- Leave the cake in the fridge overnight, and enjoy it the next day!
Packed with goodness, this cake comes in at around 150 calories per serving, compared to over 350 for the classic version — making it a dessert well worth choosing!
